Anguilla dell'Ancione

Seasoned pork

There is an area full of typical Tuscan products less known worldwide as products to discover gastronomic level. This is Valtiberina, land of flavours. Among the traditional products of these lands as salami, hams, loins are also products such as eel of Anguilla dell'Ancione.

Anguilla dell'Ancione has nothing to do with the freshwater fish because it is made with pork meat seasoned and salted at first. Is then finely chopped, creating slices that will add a drizzle of olive oil and Tuscan bread. Anguilla dell'ancione is great in marinade in olive oil.
