Raw milk cheese "Mattonella"


Raw cow's milk cheese, is produced with a special process that relies on the use of "milk graft" (milk let ripen at room temperature for a few hours).

The curd is put into molds in the shape of a square, which gives it similar to shapes of the tiles. The resulting forms are placed in maturing rooms, where dwell for thirty days at least.

During this time they are washed with serum (remnant of the cheese itself) saturated with salt, every seven days or so, so as to foster and select the development of molds, which of course they contaminate the product, thus enhancing the flavor.

Washed Rind cheese made from raw milk.

Ingredients: milk, salt, rennet.
