An intense flavour

Follonica is not only a tourist destination known and appreciated, but it is also a centre where agriculture and animal husbandry, have always played an important role. It is here that the dairies of the territory shall endeavour to give life to one of the most popular products in the region's dairy: the Pecorino Toscano DOP, Italian excellence all to taste. On grounds of this fine product in 1985 born Pecorino Toscano DOP Consortium that now meets approximately 245 breeders and 17, while the protected designation of origin came in 1996.

The story of this cheese, born to Etruscan, counts among its many admirers celebrities like Lorenzo il Magnifico and Pope Pius II. Depending on its maturation can be used as a table cheese, hard or, accompanied with jam or honey. As a young man the cheese has a sweet taste and an aroma of milk that goes well with white wines such as Pitigliano; While during maturation the flavors become more focused and determined and are combined with the red wines such as Morellino di Scansano or Chianti Classico.
