Tarese del Valdarno

The typical bacon of Valdarno

The Tarese is a cured meat of pork that recalls the classic Bacon but its taste is much more delicate and its dimensions are much more important. The Tarese is obtained from the stomach of pigs of large size from which it originates in ancient times when the animal was being kept. Usually its preparation requires a maturation with salt and spices and matured for about 3 months.

Today this cured meat is still greatly appreciated but it's not easy to find and prevent the disappearance of this type was inserted between principals Slow Food.
