Festa della Salacca give away, since the most remote times, the period of lent in the area of Valdarno Superiore. The Salacche are some tasty salted anchovies, seafood typically "poor" and then purchased by the people less well off, that they used to eat for lent.
Even today this tradition is deeply felt in San Giovanni Valdarno and takes place every year on Ash Wednesday along the right bank of the Arno. For the occasion are made Salacca in paper that are usually burned at the end of the day.
