Fagiolo di Sorana

The bean IGP in the province of Pistoia

The Fagiolo di Sorana PGI is grown in the municipality of Pescia, Pistoia. This bean has a rather squashed and cylindrical.

The Fagiolo di Sorana PGI must be stored in a cool place and away from moisture. Fortunately the hob does not affect the nutritional value and it is important to soak them in warm water, the night before cooking. Sorano bean is also excellent simply boiled and dressed with a drizzle of extra virgin olive oil, a pinch of salt and pepper.
