Sparkling wine made from 100% certified organic Sangiovese grapes, entirely produced on the farm in Tuscany following the principles of biodynamic agriculture. The grapes, selected in the vineyard called Collina well exposed and cultivated with saplings, are harvested by hand with early harvest in order to maintain a good acidity and freshness. The vinification involves a soft pressing in whole bunches, alcoholic fermentation in stainless steel tanks and subsequent refermentation in the bottle with a stay on the lees for at least 24 months.
