Olives selected and harvested in advance to keep the acidity level low. Cold extract from typically Tuscan cultivars: Frantoio, Correggiolo, Leccino, Moraiolo, Maurino and Pendolino grown according to the organic method. 

HARVEST: The harvest is done in a period ranging from mid-October to the end of October depending on the trend of the year. It takes place exclusively by hand with the help of large nets on the ground to contain the falling olives. The olives and fallen leaves are placed in perforated plastic boxes, in the evening before reaching the mill they are passed over with a defoliator in order to eliminate all the leaves.

MILLING: The milling process is carried out at a qualified and certified BIO mill that uses a modern mill in a continuous cycle and at a controlled temperature between 18 and 23 degrees.

STORAGE: The oil then continues its path in stainless steel containers to rest and let the small solid parts present decant in a completely natural way. Subsequently, depending on the request, it is bottled. All these steps take place in rooms protected from light and at a controlled temperature.

CHARACTERISTICS: At the sight it is clear, with a color it is an oil of good intensity and at the same time delicate. On the nose and taste it is a harmonious fruity oil with rich hints of artichoke and thistle.

PAIRINGS: Suitable for condiments of raw foods (such as various salads) or for marinating fish, because its peculiarities of taste and aroma are able to make the food less pasty and less fat by highlighting the freshness of the cooked product.

TIPS: Store away from light and in a cool place.

ANALYSIS: Acidity is a parameter that indicates the percentage of oleic acid in an oil and is the main indicator of quality. The lower its value, the higher the quality of the product. The maximum acidity limit for an extra virgin olive oil is 0.8%. Free acidity of our Extra Virgin Olive Oil is 0.13% expressed in Oleic Acid.
