Olives selected and harvested in advance to keep the acidity level low. Cold extract from typically Tuscan cultivars: Oil mill, Correggiolo, Leccino, Moraiolo, Maurino and Pendolino grown according to the organic method.

HARVEST:The harvest is made in a period from mid-October to the end of October depending on the trend of the vintage. It takes place exclusively by hand with the help of large nets on the ground to contain falling olives. The fallen olives and leaves are stored in perforated plastic boxes, the evening before reaching the mill they are reviewed with a defoliator so as to eliminate all the leaves.

MILLING:The milling process is carried out at a qualified and BIO certified mill that uses a modern continuous cycle and temperature controlled temperature crusher between 18 and 23 degrees.

STORAGE:The oil then continues its path in stainless steel containers to rest and let the small solid parts present be decanted in a completely natural way. After that depending on the request it is bottled. All these steps take place in light-protected and temperature-controlled rooms.

CHARACTERISTICS:At the sight it is clear, from color it is an oil of good intensity and at the same time delicate. Smell and taste is a harmonious fruity oil with rich hints of artichoke and thistle.

PAIRINGS:Suitable for condiments of raw foods (such as various salads) or for marinating fish, because its peculiarities of taste and scent manage to make food less pasty and less fatty highlighting the freshness of the cooked product.

TIPS: Keep away from light and in a cool place.

ANALYSIS: Acidity is a parameter that indicates the percentage of oleic acid in an oil and is the main indicator of quality. The lower its value, the higher the quality of the product. The maximum acidity limit for an extra virgin olive oil is 0.8%. Free acidity of our Extra Virgin Olive Oil is 0.13% expressed in Oleic Acid.
