Fagiolo Zolfino

Legume with a delicate flavor

The zolfino is a product of excellence of Valdarno Superiore. This legume is particularly digestible due to very fine rind.

Normally this bean is grown near the famous Balze of Valdarno, on poor soils at a latitude of between 300 and 600 meters. The typical cooking of the zolfino is long and in Valdarno is still performed in typical crock pots.
