The ciaramito is an ancient and traditional sweet of Amiata grossetana, whose recipe is secret and few people in the area are familiar with the recipe with the right doses.
The main ingredients to prepare it are the eggs, flour, sugar, baking powder, anise seed and suet; the dough when ready is placed in a cake pan. The lustrous brown ciaramito owes its golden that is being cooked.
Prepared by mothers during the engagement of daughters, was offered as a gift to the future son-in-law. This is a sweet poveror chestnut flour, the main product of Mount Amiata. The richest families used to accompany it with ricotta cheese or cream to soften it a bit.
Today in the village of Castell'Azzara, home of ciaramito, has remained a single bakery producing about a ton per year.
