Zuppa di Arselle di Viareggio

Main course or appetizer of Versilia

Versilia, land known for its beautiful beaches and its boundless seascapes is also rich in curious typical food and wine to be discovered. Among these the Cacciucco alla viareggina is spicier than rival Cacciucco alla livornese, or even the typical "zuppa di arselle", called "nicchi" in Viareggio. This is a dish that lends itself well as a main course or as an appetizer. The importance of this soup is to make sure that you have always fresh fish.

It's a delicate "zuppa di arselle", roasted bread and garlic. Arselle are shellfish and give to the dish a delicate flavor. The bread once set will absorb the juicy sauce escaped from the cooking of the clams. These are so abundant under the Tuscan beaches and for this, they are often used to cook other delicacies.
