A unique and ancient pasta

What are the pici?

The pici senesi, also called ' Roz ' are a type of pasta, typical of this area which is typically connected to reality. This pasta dish is full of Tuscan and is prepared with simple ingredients like flour, water, salt and oil.

Among the typical recipes include pici pici, pici with garlic crumbs and cheese and pepper.

How to prepare pici

Ingredients

  • 1 kg wheat flour type 0;
  • .5 L of water;
  • Salt b
  • You can also add the following ingredients in the dough (not included though in ancient traditional recipe): 1 egg for 1 kg of flour; Extra Virgin olive oil to taste.

Preparation

To prepare the pici , handmade, it is mixed vigorously for 10 minutes the flour with warm water and a pinch of salt. After leaving aside the mixture for half an hour, it stretches into a kind of browse high one centimeter, from which are derived the small strips that are processed in your hands by rolling the PANI as evenly as possible. The dough is spread on a cloth and dusted with wheat bran or cornmeal to prevent sticking.
