The soft sway of the waves, thanks to constant temperatures and the lack of light, keeps hanging Lees produced by the long process of fermentation. Usually the constant movement, in the cellar, is produced mechanically, here instead is replaced by the gentle lull of the ocean. The bottles, once recovered and brought to the surface, present an original cover of marine sediments.
