Recipe for "Tordelli della Versilia"

A gourmet dish for pasta lovers

You have dinner guests? Well! Suggest a delicious dish of the Tuscan tradition, tordelli Versilia.

Follow our tips to achieve this specialty!

 

What does it take to prepare tordelli?

Ingredients for the filling for 6 people:

  • 400 grams of minced meat
  • 100 grams of mortadella
  • 300 gr of chard
  • a handful of pecorino romano and grated Parmesan cheese
  • bread crumb
  • 2 whole eggs
  • 1 clove of garlic
  • milk
  • oil
  • nutmeg, cinnamon, salt, black pepper

Ingredients for the dough

  • 500 grams of flour 00
  • 2 whole eggs
  • Salt
Preparation of the filling
 

Brown, with a little oil, the meat, and add all the spices. Meanwhile, wash the chard, boil it and go over it in the pan.

Allow to cool both the meat and the vegetables and put them in a bowl, add here the mortadella, the crumb well squeezed, eggs and cheese. Mix all the ingredients with care and energy.

Preparation of the dough and filling
 

Pour the flour on a pastry Board and knead it with eggs and oil. After making the dough to rest for 30 minutes then roll out with rolling pin or with the machine and carry 13 cm high strips.

With a circular glass create diskettes on which the distributed stuffing. Now fold the dough over itself and seal it with the help of the prongs of a fork.

In a saucepan bring to boil a good amount of water and pour the tordelli ranging drained as soon as they float to the surface.

The tortelli are great topped with meat sauce and grated Parmesan cheese!
