Little culinary journey within the Tuscan cuisine

Recipe on how to make spaghetti with arselle

Within the Tuscan cuisine you can discover flavours, traditions and stories worthy of note. A region rich in landscapes, from the sea to the mountains, offer a unique heritage of tastes and experiences.

It's summer and the beach in these hot days is felt, which is why I decided to do a little culinary journey by telling you a dish of Versilia: spaghetti with mussels made in Viareggio.

A tasty dish that smells of the sea and of Tuscany. A dish reminiscent of childhood when as children, playing on the shore of the beach, you collected the cockles.

In Versilia the clams, cockles or whatever you want, they are easy to find in the sand and are often confused with clams for their resemblance, but their flavor is more detail and delicate.

A typical dish of the culinary tradition of Versilia, easy to prepare, even for those who are not familiar in the kitchen, with just a few ingredients capable to enhance the flavor of the exclusive raw materials.

Here is the recipe of delicious spaghetti with arselle alla viareggina.

Ingredients for 4 people

What does it take

  • 1 Kg Clams
  • 350 g spaghetti
  • Extra virgin olive oil, salt and white pepper q. b
  • 1 clove of crushed garlic with a knife
  • a glass of dry white wine
  • chopped parsley q. b

Proceedings

First, place the mussels in a large bowl filled with water and leave for about an hour. During this period, where the clams are "purged", change the water several times, so that the sand is totally eliminated. Once this is done, put the clams in a large pan, Cook on a high flame and waiting they hatch the shells. It is important in this step, cover the pan.

Once opened and store them separate from your shell shellfish in a clean plate. Filtered water which issued using a colander, which will be used later during baking. In a separate pan place the extravirgin olive oil, chopped parsley, a clove of garlic and sauté over medium heat. After a few minutes, add the clams, salt and pepper.

Spaghetti, cooked al dente, toss in the pan for a minute so as to mix everything.

This dish is ideal to be accompanied by a glass of white wine made in Tuscany!
