In the town of Gambassi Terme, Empoli-Valdelsa hills lies the Fattoria Le Caprine Soc. Agricola s.s.

From the lecture halls of Milan with a dream, Michela and Matteo along with brother-in-law Raffaele achieved in 2016, the desire to become breeders of dairy goats. From their studies in animal husbandry derives the different approach for goat breeding farm the goat cheese production.

A day on the farm starts at sunrise looking after animals, preparing them for pasture fence and continues with the processing of fresh milk for the production of high quality cheeses. What matters to Fattoria Le Caprine is first and foremost animal health which becomes the starting point for a product of excellence. Animal feeding, exclusively with fresh grass, gives the goat milk nutritional properties, being a product more digestible and less fat than the vaccine.

Michela, Matteo and Raffaele realize their cheeses with strictly raw processing, without pasteurization, in order to maintain high quality standards. Use of production technologies of French origin giving rise to fresh goat to lactic coagulation with à la louche, but also a "croste fiorite" and "croste lavate".

Fattoria Le Caprine is also sensitive to environmental issues and pay particular attention to recovery using cisterns for rainwater, organic waste, manure as fertilizer and practicing green manure to enrich in a natural soil.

Fattoria Le Caprine organizes guided walks with tasting of their products, to discover and understand the agricultural world by explaining to the participants the rhythms, the philosophy and how the cheeses are born. Michela, Matteo and Raffaele are committed to transmitting the message of the importance of animal welfare as a starting point for the production of genuine products and quality. An experience that follows the production cycle starting from the stables to get to know and appreciate the products of their work and the wonderful land in which they are born.
