Egg Guitar Processing

The dough, composed of italian hard wheat semola of the highest quality and fresh Italian eggs raised on the ground,is mixed in a special kneaving and room temperature and, once it has reached the necessary characteristics, it is passed inside the grinder that presses the dough until it reaches the right consistency in order to pass to the leafer. With the puffers, which replace the wooden rolling pin, the dough is rolled at ambient temperatures until it reaches the ideal thickness to be able to pass to the cutters. Each step of the leaf machine is followed manually with 12-14 repetitions and the thickness of each sheet changes depending on the type of dough to be produced. The thickness of each sheet is also measured manually as it used to be,

After passing the pastry in the appropriate cutters, manually the matassine are made that will be placed on the frames for drying. Drying, also takes place at room temperature for a very long time about 48 hours and rested.

The processing process ensures the preservation of egg proteins and semoly carbohydrates to maintain elasticity, porosity and flavor at the highest levels.
