The Gallic Rose, probably native to West Asia, has been known since 1000 BC by Persians and Egyptians, but it had its splendour in Roman times. It was then re-imported to Europe during the crusades by the Earl of Champagne in 1240.

The best known Gallic Rose is the Gallic Officinalis used as the Red Rose symbol of the Lancasters in the War of the Two Roses as opposed to the White Rose of York (Rose Alba).

The Gallic Roses rose to fame at the beginning of the 19th century in France, where the craze for roses was encouraged by Josephine, Napoleon's wife.

The flowering is unique and fragrant, the colors are very marked. The rosaries have low, slender and bristly stems; the leaves are dark green. The flowers are red, pink or purple; the scent is sweet and intense.

Tips of use: with a strong and very characteristic flavor, it has a slight bitter aftertaste. It is combined with mature cheeses or roasts of game.
